Caramelised Caroline

This flatbread has three stunning strong flavours that will leave you in a superbly happy state.

Caramelised Caroline is an institution in my household. It’s the dish we serve when we’ve had a rough day and need comfort and good, strong flavours to haul us back on our feet again. It’s easy to make and really features three key ingredients: a lovely rosemary dough, a smattering of gorgeous caramelised red onions, and the incredible smoked applewood cheese.

Of course, things became rather awkward when we eventually became friends with someone called Caroline. The flatbread was only so named because “Caroline” has a wonderful satisfying assonance with “caramelised”. Still, it’s the best-tasting dish you could ever hope to have named after.

For the base:

1/2 teaspoon fast action dried yeast
300g strong white flour
2 tablespoons sugar
15g butter
1 tbsp milk powder
1 tbsp salt
4tbsp rosemary leaves
210ml lukewarm water

For the topping:

Two red onions
2 tbsp sugar
A knob of butter
200g smoked applewood cheese
A pinch of sweet paprika

1. If you’re lazy, have too many other things to fill your day with or don’t enjoy kneading dough, you can whack all the flatbread ingredients into a breadmaker as I do, for 45 minutes on the pizza dough setting. Or you can mix all the ingredients except the water together in a mixing bowl, gradually adding the water until it forms a soft dough. Then knead for ten minutes, leave to rest for twenty minutes and then spread out on a floured surface and knead again.

2. While the dough is proving, chop the red onions finely and throw into a saucepan with a knob of butter and the sugar. Cook until browned and caramelised.

3. When the bread base is ready, roll it out on a floured surface and stretch to fit your baking tray. Spread the onions evenly over the base and then sprinkle the cheese over the top evenly, finishing with a pinch of paprika over the top.

4. Place the flatbread in the oven at 200 degrees for 20 minutes, or until the dough has turned golden and the cheese has melted and is heaving gently in little mounds (this will be quite obvious). Then eat, joyfully.
