Beetroot juice

A tasty homegrown juice with beetroot and apple to energise you.

Every morning when I’m eating my breakfast (at this time of year, it’s rhubarb porridge), I also have a big pint glass of beetroot and apple juice to drink. This is easy to make: I core and dice one apple, and peel and dice half a beetroot, whack them in the blender with enough water to cover them, and whiz them at full speed for five minutes, and serve.

This year I’m growing some multicoloured beets: the beautiful hot pink ‘Chioggia’ and the yellow ‘Burpees Golden’. Both will make for lovely bright juice drinks in the morning, and I’ll be able to pick their leaves, and eat the thinnings, too.

Beetroot is supposed to be really good as an energy boost, and for your skin as well. All I know is that it makes me feel pretty darn good in the mornings, and that since I’ve started making my own juices at least twice a day, I’m often getting through even the busiest of the long working days that I do without any caffeine at all, which is a big change.

    Very delicious. I can see how it would make a perfect breakfast drink. I hadn’t used my blender in years, and it required quite a bit of liquid to blend. I used water, was that right? Perhaps the dryness and hardness of the beets would be more suited to a food processor.

      Hi Karen, yes water is the right thing to use: the beets should be fine to do in a blender. That’s what I use certainly as they’re pretty fleshy once you’ve peeled them and chopped them up sufficiently small. Just make sure the diced fruit and beets are almost covered by the water and you should be fine.
