HomeblogGolden beetroot juice A lovely yellow smoothie that’s healthy and bright. Any reasonably loyal F&F reader will know my love of beetroot, especially beetroot juice. I drink a lot of this stuff, whether it be standard blood red beetroot juice, or white beetroot juice. And as I grew golden beetroot on the plot this year too, I’m a big fan of the yellow beetroot juice too. The roots have such a lovely orangey glow to them when you pull them from the ground. And don’t forget to use the leaves like mature chard or blend them like a winter green smoothie. And when they’re sliced, they’re gorgeous too. They look marvellous in salads. But for this recipe, all you need to do is to dice the sliced roots, throw them in a blender with an apple or half a cup of raspberries (preferably yellow ones), add water to cover the ingredients, blend until smooth, and then drink. For the runners out there, beetroot is really very good for you. It apparently helps your body use oxygen better. And if you’re more of a couch potato, or an office stresshead, beetroot is a better way or giving yourself a boost than buying yet another cup of coffee.
