Courgette flowers

A quick and easy recipe for all those courgette and pumpkin flowers.

Last weekend we harvested the last of the pumpkins from the allotment. But the plants are still putting out flowers and young fruits, and so we’re putting them to good use by stuffing them and cooking them in batter. Yum!

Here’s an immature pumpkin fruit, with flower attached.

I’ve only picked the fruits that have clean, fresh flowers on top.

And I used a pair of tweezers to remove the pollen and stamens from the inside of the flower, then stuffed the cup-like petals with feta, caramelised onions and sundried tomatoes. I twirled the petals together to hold this lovely mix in, and then dipped them into this batter recipe before frying. So simple, and so yummy!
