Sweet potato squash

One of the best-flavoured squashes you can grow, in a simple seedy bagel.

I was probably more excited about growing ‘Green Striped Cushaw’ or ‘Sweet potato’ pumpkins. So I was even more pleased when the bush I’d planted produced three whopping fruits. Here’s one of them:

As you can see, this squash has a few blemishes on it, which means it’s no good for storing. Better eat when you know it’s good and leave the fruits that don’t have pock marks for the spring. Here’s one quick and yummy way of using this sweet, creamy, lovely squash.

A feta, squash and sundried tomato bagel. Or a seedy roll, if you’d like. I don’t need to tell you how to arrange squash chunks, feta and sundried tomatoes. But I do need to tell you that this squash has a wonderful flavour. It is one of the best and if you haven’t grown it yet, you really should.
