Homeblog‘Sweet potato’ squash II Sweet potato squash - a star fruit with fantastic flavour and storage abilities. My ‘Sweet Potato’ squash plants were pretty enthusiastic this year. They two lovely big fruits each, which looked rather different to one another. So this was the fourth squash that I roasted this weekend. It has a much drier flesh than the one I roasted earlier in the season, but I wonder whether that is simply because this squash has been in storage for a long time. And it was also remarkably seedless: It’s fab to be eating last year’s squash in March, but if you have many more stored, I’d recommend giving them a jolly good check. It’s unlikely you’ll get many more weeks of storage out of them, and there’s something desperately miserable about chucking out a fruit you slaved and watered and mulched to grow because it has gone mouldy while you weren’t looking.
