Make a delicious and healthy breakfast with bananas and eggs. Now that I’m a chicken-keeper, I’m always having to think of new ways to use eggs. My banana pancakes are a favourite, but here’s an easier recipe using the same ingredients: banana scrambled eggs. Ingredients 2 eggs 1 banana 4 tbsp live set natural yoghurt half a cup berries, frozen or fresh Directions 1. Blend the banana and the eggs together until smooth. Heat some olive oil in a saucepan and pour the mixture in. Stir constantly over a medium heat until cooked, which should take about four minutes. 2. If you’re using frozen berries, buzz them in the microwave for two to three minutes until they are warm and the juice has run out of them. 3. Serve the scrambled eggs with dollops of yoghurt and the berries trailed over the top. Eat. Yum.
