They are super-easy to make and super-healthy to eat as a snack or for breakfast. And they use up eggs! Print Sugar-free banana muffins Author: Fennel & Fern Recipe type: Healthy Cuisine: Healthy Prep time: 5 mins Cook time: 30 mins Total time: 35 mins Serves: 12 No sugar, no fat added to these fruity muffins. Ingredients 2 bananas 6 eggs Handful porridge oats Frozen berries Cinnamon Grated orange zest (optional) Directions Chop the banana and break the eggs into a blender. Throw in the porridge oats, cinnamon and the orange zest if you're using it into the blender and whizz the ingredients together until they form a smooth and thick mixture. Lightly grease some cupcake moulds and pour the mixture into them so that it finishes just below the top. Drop a good number of berries into each mould. Bake in the oven for 30 mins at 180 degrees. 3.2.2885 I take these to work with me to snack on when that horrible 3pm slump happens, or as a breakfast after a morning run when I’m busy.
