HomeblogRhubarb and custard cakes A superbly easy rhubarb recipe. These cakes are by Claire Sutton, a blogger whose recipes and photography never fail. Seriously: I’ve never tried anything from her site that didn’t work first time, taste great first time, and look gorgeous first time and you can’t say fairer than that. Claire’s recipe is for mini cakes, but I only had a loaf tin to hand, so that’s what I used. It’s a great, quick way of using up rhubarb and eggs and so on: just the sort of thing every gardener should have a surplus of. You are kind, I’m glad you find my recipes are successful for you. I do always aim to test them to make sure they are foolproof 🙂 I wish I had too much rhubarb. My two plants are still young and feeble. Not sure if I should pull the stalks anyway (to encourage them) or to leave them to grow on. Any advice gratefully received. Reply fennelandfern June 2, 2015 Hi Claire I’d leave them a year and give them some feed to help them bulk up a bit. Pulling the stalks does stress the plant.
