These cakes are by Claire Sutton, a blogger whose recipes and photography never fail. Seriously: I’ve never tried anything from her site that didn’t work first time, taste great first time, and look gorgeous first time and you can’t say fairer than that.
Claire’s recipe is for mini cakes, but I only had a loaf tin to hand, so that’s what I used.
It’s a great, quick way of using up rhubarb and eggs and so on: just the sort of thing every gardener should have a surplus of.
