Healthy banana muffins

This sugar-free, low-fat, healthy carb banana muffin recipe uses sweet fruit for a great taste.

So, it’s that day of the year when you’re thinking about living healthily for a little while at least. These sugar-free and low-fat but super-tasty fruity muffins will help you do that.

They are super-easy to make and super-healthy to eat as a snack or for breakfast. And they use up eggs!

No sugar, no fat added to these fruity muffins.
  • 2 bananas
  • 6 eggs
  • Handful porridge oats
  • Frozen berries
  • Cinnamon
  • Grated orange zest (optional)
  1. Chop the banana and break the eggs into a blender. Throw in the porridge oats, cinnamon and the orange zest if you're using it into the blender and whizz the ingredients together until they form a smooth and thick mixture.
  2. Lightly grease some cupcake moulds and pour the mixture into them so that it finishes just below the top. Drop a good number of berries into each mould.
  3. Bake in the oven for 30 mins at 180 degrees.

I take these to work with me to snack on when that horrible 3pm slump happens, or as a breakfast after a morning run when I’m busy.
